Homemade Strawberry Ice Cream

On Sunday morning we went strawberry picking a got around 1.6kg of fresh, ripe strawberries to bring home. I though Aurora would have eaten and shared a lot more of the strawberries than she did, and now that she’s away for the rest of the week, I had absolutely no idea what to do with them. I definitely did not want to throw them away, so I decided to make some ice cream. Definitely not the banting/paleo/low carb/no sugar kind of ice cream (in case you’re wondering).  I cleaned and chopped the strawberries up, then dusted a bit of icing sugar over and let them “marinate” in the fridge for about an hour. Before adding to the ice cream mix I roughly pureed with a hand blender For the ice cream I used:

3 x 250ml tubs of cream

1 x tin of condensed milk

2 x teaspoon vanilla essence

Mix ingredients into a bowl and blend (I used the hand blender) for a couple of minutes – the mixture doesn’t need to thicken, you just want to get it all airy (I don’t know how else to describe it). Once you’re happy with the consistency, slowly pour the strawberries in and mix well. Freeze until set. About halfway through the freezing I took the container out and just mixed it all up again with a spoon as a lot of the strawberries had sunk to the bottom of the container.

I think you could probably make just about any flavour your heart desires – a couple of months ago i added crushed roasted almonds and honey liquor – what an absolutely decadent dessert!
